Happy Harvest!

We love harvest time! So, here are some harvest pancakes for you. They are easy and very good. I got the recipe from cooking light.

1 Cup all-purpose flour
2/3 Cup whole wheat flour
2 Tablespoons brown sugar
1 1/2 teaspoons baking powder
3/4 teaspoons salt
1 2/3 Cup milk
1 Tablespoon butter, melted
1 large egg, lightly beaten
optional, dash of cinnamon
Mix it up and cook! That's it!

If you are very adventurous, and want to try your own syrup (technically it's a sauce, but you can call it whatever you want)--here is a fun one--just use a little bit since it is super sweet!

1 Cup sugar
1/3 Cup water
1/3 Cup chopped pecans
2 Tablespoons milk
1 1/2 Tablespoons butter
2 teaspoons vanilla

The recipe also calls for 1 Tablespoon of bourbon, but we didn't have any--so I skipped that part. :) If you have it at your house, let me know how it turns out!

Combine sugar and water in a small saucepan over med-high heat. Cook 5 min. or until sugar dissolves, stirring constantly. Stir in pecans, milk, butter, vanilla and bourbon. Reduce heat, and cook 3 min. or until mixture is thick and bubbly.
