The Weekend

We had a wonderful weekend visiting Michael this past weekend! 

Here are some highlights:

*Titus did super on the airplane rides and I was so proud of him! 

*Jamie picked us up from the airport and made us a very yummy lunch complete with homemade pita chips--which I love. It was fun to catch up with her and Dustin and see their very cool home! 

*SNOW!...although sadly there are no pictures of that!

*Seeing Michael's new place!

*Meeting Brooklynn Grace, and hanging with her parents... and Bella!

*Meals at some fun local places.

*Church with Michael and witnessing his baptism and testimony.

*Seeing the seminary.

*Kung Fu Panda on Michael's home theatre big screen.

*LOTS of emergency laundry.  (Thanks Brooklynn for sharing your detergent and Shout with us. )

There was much more too. It was great to see so many old friends and Titus had a blast!  His favorite part was seeing Uncle Michael, who has a very cool cell phone and making new friends, Brooklynn (he was a little nervous meeting such a pretty girl) and meeting Bella!  He also loved Jamie and appreciated her letting him play and take a bath in her bathroom sink!

Congratulations!

Congratulations to Michael and Danna on their engagement! We got to hang out with them some this weekend which was fun. Fajitas (Titus says he's sorry about all the crying in the car!), a game of Wahoo and LOTS of playing with Titus. Titus misses them now!

Here is Titus giving his advice on relationships!  He knows a lot in this area.  He has about 5 girlfriends right now fighting for him.  

More Valentine Shots

Below is his "Grandpa Harvey" face.  He is practicing his swimming in this picture.  Bubbles.  Kick.  Pull.  Breath.... We have to work on the order, but I think he is doing pretty well.

Tortilla Soup

Inspired by Kari's blog, I am posting a recipe this morning. Go there and read her post about healthy meal planning. Here's a fun soup that I adapted from a Cooking Light recipe.  You can see the original recipe here.  I really enjoy this magazine, but sometimes I find that I have never even heard of so many of the ingredients... and that it would cost a small fortune to stock my pantry with all those spices and "original" ingredients.  Anybody else have that problem?  Or am I the only one?  I do appreciate their healthier versions of classic recipes. Anyway, here's a quick and yummy (and healthy) soup for you. Hope you get the chance to try it! Let me know what you think and also how you manage those recipes you find with those "ingredients you've never heard of before!"

For my version, I substituted chicken for turkey; added celery and carrots while cooking the onion.  Then let the soup simmer for longer until the veggies are done.  Last, I added some chopped avocado just before serving.  Also, I prefer to try a different cheese too.  I like it better with those additions, but you could make it according to whatever ingredients you have on hand.
