Happy Birthday T!!!

Happy Birthday Mister T!!!! He turns 6 today! He wanted to go to Chuckie Cheese's, but I think we will just celebrate at home this year.

Saturday

Saturday was a fun day! We were able to see David's mom swim at her state swim meet. She did a great job! Here are some pics!



Before we left town, we stopped by Target to get the car seat inspected. David did great installing it! I know you "experienced parents" are laughing. Or you are laughing remembering how things were when we were kids.... Where did you ride in the family car when you were a kid? On the console pretending to shift for Dad? In the floorboard? On the back dash? :) What a comfort to know that it is the Lord who keeps us and the Baby safe--in spite of our endless efforts to find the latest and greatest safety products. :)

Summer Recipes

I have intended to add some recipes lately. Here are a couple of our summer favorites. 
They are easy and very tasty! 
Our Favorite Salad
4 Cups mixed greens
2 Cups Grilled chicken breast
1 Cup cherry tomatoes
Shredded cheese
1 Peeled avacado
A few chopped green onions
1 Can black beans, rinsed and drained
1 Ear corn grilled and cut off the cob
Peppers of your choice
Dressing of your choice
Prepare chicken and corn. Wash and chop all veggies. Toss together.
Blackberry Cobbler
1 1/3 cups sugar
½ cup all-purpose flour
½ cup melted butter
2 teaspoons vanilla 
2 (14 oz.) bags frozen blackberries, unthawed
1 (15 oz.) package refrigerated pie crust (or you can make your own)
1 Tablespoon sugar
Stir first four ingredients in a very large bowl. Gently stir in blackberries until sugar mixture is crumbly. Spoon fruit mixture into a greased 9X9 baking dish.
Cut piecrust into ½ inch wide strips and arrange diagonally over berry mixture. Sprinkle top with 1 Tablespoon sugar. 
Bake at 425 for 45 minutes or until crust is golden brown and center is bubbly. Serve with ice cream.

Birthday Fun!!!!

Well we had a great time celebrating our birthdays! It is so fun having them so close together! Mr. T's is coming up (the 30th) and Baby's is on the way too! Here's a picture of the ice cream cake I made for David. It is supposed to be a swimming pool--hence the blue top, the lanes and the M & M Olympic rings. I even had a Happy Birthday banner to go over it--but I forgot to use it... :) It was fun to make and super easy. You should try it! Here's the instructions:
Ice Cream Cake:
1. Layer ice cream sandwiches, cool whip, syrup and candy pieces.
2. Then freeze for a few hours.
3. Let sit out a few minutes before you cut it. That's it!
*If you use the whipped topping in the can, I recommend doing that right before you serve it. It didn't hold its shape very well in the freezer. :)

The Crib

Well, we are checking things off of the list.... David did a wonderful job getting the crib put together on Monday evening. In spite of what everyone told us, it was easy to assemble and he got it together super fast! Thanks to Rob for helping us get it to the house over the weekend. We were a bit surprised that something for a tiny baby could come in such a big box!!!

Another Bunny Update

This morning, I went out to check on the bunnies and found their nest empty. We were so proud that they were all grown up. I kept a close watch on T anyway, since I knew they may be close by. Well, later we left T unattended in the yard and he discovered this one. Here it is.
